The Galerie chocolate is a caramel ganache with a touch of French sea salt from Guérande ganache. The filling is covered in dark chocolate and the praline is decorated with the signature Neuhaus "N". The Galerie chocolate bears the name of the "Galerie de la Reine" or Queen's Gallery in Brussels, where Jean Neuhaus opened his first store in 1857 and where the first praline was created in 1912.
